Cinnamon
Cinnamon is a spice that is harvested from the bark of a type of laurel tree. This spice is most often used to flavour foods although it also has specific medical benefits and is also used in the confectionery and perfume manufacturing industries.
Cinnamon in cooking
Although generally perceived as being a sweet spice, cinnamon is also widely used in the preparation of savoury dishes as well such as certain meat dishes, stews, casseroles and curries. In Middle Eastern cookery, for example, the spice is often used to flavour a variety of lamb and chicken dishes.
The spice is often used in the baking of cakes, breads and pastries, in desserts, in rice dishes and in hot and cold drinks.
